Stewed apricots
Written Serves 430 minutes, plus soakingUpdated

Dried apricots come back to life with a long soak and a slow simmer. The result is soft fruit in its own amber syrup: good served warm or chilled.
You will need
- 200 g dried apricots
- 2 cups water
- 2 tablespoons sugar or honey, or to taste
- 1 green cardamom pod, lightly crushed
- A few saffron threads, if you like
- Cream or thick yoghurt, to serve
Method
- Rinse the apricots and soak them in the water for at least four hours, or overnight.
- Tip the apricots and their soaking water into a pan. Add the sugar and cardamom.
- Simmer gently for twenty to twenty-five minutes, until the fruit is soft and the liquid has thickened to a light syrup. Add the saffron for the last five minutes.
- Cool, take out any stones, and serve with a spoonful of cream or yoghurt.
